The Best Egg Salad Sandwich

6 large hard-boiled eggs , peeled and chopped
1/4 cup mayonnaise (or Greek yogurt for a lighter option)
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice (or white wine vinegar)
1/4 teaspoon salt
1/4 teaspoon black pepper , freshly ground
1/4 cup diced celery (optional, for crunch)
2 green onions , thinly sliced
1 tablespoon chopped fresh dill (or parsley)
