🍚 Ingredients
2 cups cooked and cooled white rice (best if day-old)

1/2 cup grated Parmesan cheese

1/2 cup chopped pepperoni

1/2 cup shredded mozzarella (plus more for stuffing)

2 eggs

1/4 cup chopped parsley or basil (optional)

Salt and black pepper, to taste

1 cup breadcrumbs (for coating)

Oil for frying (vegetable or canola)

🧑‍🍳 How to Make Cheesy Pepperoni Rice Balls
Prepare the Mixture:
In a large bowl, mix cooked rice, Parmesan, chopped pepperoni, shredded mozzarella, 1 egg, herbs (if using), salt, and pepper. Stir until well combined.

Form the Balls:
Take a spoonful of the mixture, flatten it in your hand, and place a small cube of mozzarella in the center. Wrap the rice around the cheese and roll into a firm ball. Repeat with the rest.

Bread the Balls:
Beat the remaining egg in a small bowl. Dip each rice ball into the egg, then roll in breadcrumbs until fully coated.

Fry Until Golden:
Heat oil in a deep skillet or pot to 350°F (175°C). Fry rice balls in batches until golden brown and crispy, about 2–3 minutes per side. Drain on paper towels.

Optional: Bake at 400°F (200°C) for 20 minutes, turning once halfway through, for a lighter version.

Serve Hot:
Serve with warm marinara sauce for dipping—or enjoy them on their own!
