For the crust:

2 cups crushed shortbread cookies or graham crackers

6 tbsp melted butter

For the cheesecake layer:

16 oz (2 blocks) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 1/4 cups heavy cream (whipped to stiff peaks)

For the caramel layer:

1 cup store-bought or homemade caramel sauce

Optional: a pinch of sea salt for salted caramel flavor

For the chocolate ganache:

1/2 cup heavy cream

1 cup semi-sweet chocolate chips or chopped chocolate

Optional garnish:

Chopped Twix bars, caramel drizzle, chocolate shavings

How to Make It
Make the Crust
Combine crushed cookies and melted butter in a bowl. Press the mixture firmly into the bottom of a springform pan. Chill in the refrigerator for 15–20 minutes to set.

Prepare the Cheesecake Filling
In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and creamy. Gently fold in the whipped cream until well combined and fluffy. Spread the mixture evenly over the chilled crust. Refrigerate for at least 1 hour.

Add the Caramel Layer
