Stuffed Zucchini Boats with Garlic Herb Filling
Ingredients:
4 medium zucchinis
1 tablespoon olive oil
3 garlic cloves, minced
1/2 onion, finely chopped
1/2 cup cherry tomatoes, diced
1/2 cup cooked quinoa or rice
1/2 cup grated Parmesan or shredded mozzarella
1/4 teaspoon dried oregano
Salt and pepper, to taste
Fresh basil or parsley, for garnish
