Ingredients:
For the Fries:

4 large russet potatoes (or frozen fries if you want to shortcut)

Vegetable oil for frying

1 tbsp chili powder

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp cayenne pepper (adjust to spice preference)

For the Nacho Cheese Sauce:

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 cup whole milk

1 1/2 cups shredded cheddar cheese

1/2 tsp chili powder

1/4 tsp smoked paprika

Salt to taste

Instructions:
1. Prepare the Fries:
If using fresh potatoes, peel and cut them into thin, evenly sized strips. Soak the fries in cold water for at least 30 minutes to remove excess starch, then pat dry thoroughly.

2. Fry the Fries:
Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 3–4 minutes per batch. Drain on paper towels.
