Ingredients
2 tablespoons vegetable oil (or sesame oil for extra flavor)

3 cups broccoli florets

8 oz mushrooms, sliced (shiitake, cremini, or button work well)

1 red bell pepper, thinly sliced (optional for color and sweetness)

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup low-sodium soy sauce

1 tablespoon oyster sauce or hoisin sauce (optional for richness)

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds and green onions for garnish

Cooked rice or noodles for serving

Instructions
Heat the oil
In a large skillet or wok, heat oil over medium-high heat.

Stir fry the vegetables
Add broccoli and cook for 2–3 minutes, stirring frequently. Add mushrooms (and bell pepper, if using) and stir fry for another 4–5 minutes until vegetables are tender-crisp.

Add aromatics
Stir in garlic and ginger, cooking for 30 seconds until fragrant.

Make the sauce
In a small bowl, mix soy sauce, oyster/hoisin sauce (if using), and the cornstarch slurry. Pour over vegetables and stir until the sauce thickens and coats everything evenly—about 1–2 minutes.

Garnish and serve
Remove from heat and sprinkle with sesame seeds and sliced green onions. Serve immediately over steamed rice, noodles, or even quinoa.
