Cajun Chicken and Sausage Gumbo: A Bowl Full of Southern Soul

If there’s one dish that captures the heart and soul of Louisiana, it’s gumbo. Hearty, spicy, and packed with rich, smoky flavor, Cajun Chicken and Sausage Gumbo isn’t just a meal—it’s a cultural experience. Whether you’re from the South or just craving some serious comfort food, this gumbo recipe brings authentic bayou flavor straight to your kitchen.

🔥 What Is Gumbo?

Gumbo is a thick, stew-like dish rooted in Louisiana Creole and Cajun cooking traditions. It’s usually made with a dark roux, bold seasonings, and a mix of proteins like chicken, sausage, or seafood. The holy trinity of Cajun cuisine—onion, celery, and bell pepper—serves as the flavor base.

This version focuses on chicken and andouille sausage, giving you a smoky, savory bowl that’s perfect over rice on a cool evening.

🍗 Ingredients:

For the roux:

½ cup vegetable oil

½ cup all-purpose flour

For the gumbo:

1 lb smoked andouille sausage, sliced

1 lb boneless, skinless chicken thighs or breasts, cut into chunks

1 medium onion, chopped

1 bell pepper, chopped

2 celery stalks, chopped

4 cloves garlic, minced

6 cups chicken broth

2 tsp Cajun seasoning (more to taste)

1 tsp smoked paprika

1 tsp dried thyme

2 bay leaves

Salt and pepper to taste

Green onions and parsley, chopped (for garnish)

Cooked white rice (for serving)

🍲 How to Make It:
1. Start with the Roux

In a large pot or Dutch oven, heat the oil over medium heat. Slowly whisk in the flour, stirring constantly to avoid burning. Continue to stir for 20–30 minutes, or until the roux turns a deep brown color—like chocolate. This step builds the base flavor of your gumbo.

2. Sauté the Veggies

Add the chopped onions, bell peppers, celery, and garlic to the roux. Cook for 5–7 minutes, until softened.

3. Brown the Meats

In a separate pan (or push veggies aside), brown the sausage slices and chicken pieces until they get a nice sear. Add them to the pot.

4. Build the Gumbo

Pour in the chicken broth, then stir in Cajun seasoning, paprika, thyme, bay leaves, and a pinch of salt and pepper. Bring everything to a boil, then reduce heat and simmer uncovered for 45–60 minutes.

5. Taste and Adjust

Skim any oil off the top, check seasoning, and add more spice if needed. Remove bay leaves before serving.
