Amish Onion with potatoes

Instructions:

Heat Butter & Oil : In a large skillet over medium heat, melt the butter and add the olive oil.
Caramelize Onions : Add sliced onions and cook until soft and golden brown, about 10 minutes, stirring occasionally.
Add Potatoes – Stir in the sliced potatoes, season with salt, pepper, garlic powder, and smoked paprika.
Cook Until Tender – Pour in the broth, cover, and let cook for 15-20 minutes, stirring occasionally, until the potatoes are soft and golden.

Variations & Tips

For a creamier version, you can add 1 cup of sour cream or cream cheese to the potatoes during the last hour of cooking. If you have picky eaters, try adding some shredded cheese on top during the last 30 minutes for a cheesy twist. You can also incorporate some diced ham or cooked bacon for added flavor and protein. For a lighter option, substitute the butter with olive oil and use low-sodium chicken broth.
Serve & Enjoy – Garnish with fresh parsley if desired and serve warm.
This dish pairs well with roast chicken, pork chops, or any hearty home-cooked meal!
