Classic Pig Pickin’ Cake Recipe: A Southern Sunshine Dessert Favorite
There’s something special about a dessert that can light up the whole table with just one bite. The Classic Pig Pickin’ Cake is one of those treats — a bright, citrusy, and oh-so-fluffy Southern favorite that’s been passed down through generations. Whether served at backyard barbecues, potlucks, or family reunions, this cake brings sunshine to every occasion.
Despite the quirky name, there’s no pork in this cake. It gets its name from being a go-to dessert at Southern “pig pickin’s” — whole hog roast gatherings where guests would enjoy a hearty meal and finish it off with this light, fruity cake.

🕒 Quick and easy to make, with the help of cake mix and a few simple ingredients
Ingredients
For the Cake:
1 box yellow cake mix (15.25 oz)
4 large eggs
1/2 cup vegetable oil
1 can (11 oz) mandarin oranges, with juice (do not drain)
For the Frosting:
1 container (8 oz) frozen whipped topping (like Cool Whip), thawed
1 package (3.4 oz) instant vanilla pudding mix
1 can (8 oz) crushed pineapple, with juice (do not drain)
Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or two 9-inch round cake pans.
Step 2: Mix the Cake Batter
In a large mixing bowl, combine the cake mix, eggs, oil, and mandarin oranges (juice included). Beat on medium speed for about 2 minutes until the oranges are broken up and the batter is smooth and creamy.
Step 3: Bake
Pour the batter into the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
Step 4: Make the Frosting
In a separate bowl, mix the pudding mix and crushed pineapple (with juice) until well combined. Fold in the whipped topping gently until smooth. Chill for about 10–15 minutes to let it firm up slightly.
Step 5: Frost & Chill
Spread the frosting evenly over the cooled cake. Refrigerate the cake for at least an hour before serving. This cake gets even better as it chills!
