What Are French Onion Pasta Bowls?
Think of this dish as French onion soup meets creamy pasta—sweet caramelized onions, garlic, a splash of white wine or broth, and melty cheese, all tossed with al dente pasta. It’s savory, indulgent, and surprisingly simple to make.
Ingredients
For the Onions:
3 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
Salt, to taste
1/2 tsp sugar (optional, for faster caramelization)
2–3 cloves garlic, minced
1/4 cup white wine or beef broth
1 tbsp fresh thyme or 1 tsp dried thyme
For the Pasta:
12 oz pasta (fusilli, penne, or rigatoni work well)
1/2 cup heavy cream
1/2 cup grated Gruyère cheese (or Swiss)
1/4 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley or more thyme, for garnish
Instructions
Caramelize the onions: Heat butter and olive oil in a large skillet over medium heat. Add the onions and a pinch of salt. Cook slowly, stirring often, for 25–30 minutes until deeply golden. Add sugar if desired to help them caramelize faster.
Add garlic and thyme, cooking until fragrant (about 1 minute). Deglaze the pan with wine or broth, scraping up any bits from the bottom.
Cook the pasta: While the onions cook, boil the pasta in salted water until al dente. Drain, reserving 1/2 cup of the pasta water.
Combine everything: Add cooked pasta to the onion mixture. Pour in the cream and reserved pasta water as needed to create a silky sauce. Stir in Gruyère and Parmesan until melted and creamy. Season with salt and pepper to taste.
