For the Dough:
1 cup warm milk (about 110°F / 45°C)

2ÂĽ tsp active dry yeast (1 packet)

ÂĽ cup granulated sugar

1 egg + 1 egg yolk, room temperature

3½ cups all-purpose flour

½ tsp salt

For the Filling:
½ cup unsalted butter, softened

Âľ cup brown sugar, packed

2 tbsp ground cinnamon

Optional: pinch of nutmeg for warmth

For the Cream Cheese Icing:
4 oz cream cheese, softened

ÂĽ cup unsalted butter, softened

1 cup powdered sugar

½ tsp vanilla extract

1–2 tbsp milk, as needed for consistency

👩‍🍳 How to Make Homemade Cinnamon Rolls
1. Make the Dough
In a bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy. Add sugar, egg, egg yolk, and melted butter. Mix well. Gradually add flour and salt, mixing until a soft dough forms. Knead for 8–10 minutes by hand or with a dough hook until smooth and elastic. Cover and let rise in a warm spot until doubled in size (about 1 hour).

2. Prepare the Filling
Mix softened butter, brown sugar, and cinnamon in a small bowl to form a spreadable paste.

3. Roll and Fill
Punch down the risen dough and roll out into a rectangle (about 14×9 inches). Spread the cinnamon filling evenly across the surface. Roll tightly from the long side and slice into 12 even rolls.

4. Second Rise
Place rolls into a greased 9×13-inch baking dish. Cover and let rise again for 30–45 minutes, or until puffy.
