I’ve never cooked sausages this way before, but it’s truly transformative!.

🥘 What Makes This Method So Special?
Unlike frying or boiling, roasting sausages with a glaze allows the flavors to build and intensify in the oven. The sausages caramelize beautifully, and the veggies soak up all the juices and sauce — no dry meat, no bland bites. It’s a hands-off technique that feels gourmet with almost no effort.

🛒 Ingredients You’ll Need
6–8 good-quality sausages (pork, chicken, or plant-based)

3 large potatoes, cubed

1 red onion, sliced into wedges

2 bell peppers, chopped

2 tablespoons olive oil

For the glaze:

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons honey

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: fresh rosemary or thyme

🔥 How to Make Honey Mustard Roasted Sausages
Preheat the oven to 400°F (200°C).

Prep the pan:
Line a large baking tray with parchment paper or foil. Add potatoes, onions, and bell peppers. Drizzle with olive oil, season with salt and pepper, and toss to coat.

Add the sausages:
Nestle the sausages among the veggies, giving them a little space to roast.

Make the glaze:
In a small bowl, mix together honey, Dijon mustard, whole grain mustard, and balsamic vinegar.

Coat and roast:
Brush the sausages generously with the glaze. Roast in the oven for 30–35 minutes, turning sausages once and brushing again with glaze halfway through.

Finish and serve:
Remove from oven when the sausages are browned and sticky, and the veggies are tender and caramelized. Garnish with fresh herbs if desired.
