4. **Simmer:**
Reduce heat and simmer for 30–40 minutes, stirring occasionally, until vegetables are tender and flavors have melded.

5. **Can It (Optional):**
If you want to preserve it, spoon the hot relish into sterilized jars, leaving about 1/2 inch of headspace. Seal and process in a water bath for 10 minutes.

6. **Cool and Store:**
Let the jars cool completely. Store in a cool, dark place, or refrigerate if not canning.

This chow chow is incredibly versatile. Spoon it over pinto beans, pile it on hot dogs, stir it into egg salad, or even serve it alongside roasted pork. It adds a sweet and tangy bite to just about anything.
