Ingredients:
For the Peppers:

4 large bell peppers (any color), tops cut off and seeds removed

1 tbsp olive oil

Salt and pepper to taste

For the Filling:

1 lb ground beef or turkey

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup canned diced tomatoes (drained)

1 tsp Italian seasoning

1/2 tsp smoked paprika (optional)

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheese (cheddar, mozzarella, or a mix)

Optional Toppings:

Fresh parsley, chopped

Extra cheese for melting on top

Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold all the peppers upright.

2. Prep the Bell Peppers:
Brush the inside of each bell pepper with a bit of olive oil and season lightly with salt and pepper. Place them in the baking dish and bake for 10–12 minutes while you prepare the filling. This softens them slightly and helps them cook evenly.

3. Make the Filling:
In a skillet over medium heat, add a tablespoon of olive oil and cook the chopped onion until soft, about 3 minutes. Add garlic and cook for another 30 seconds. Add the ground meat and cook until browned. Drain excess fat if necessary.

Stir in the cooked rice, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Mix well, then stir in half of the shredded cheese. Let the mixture simmer for 2–3 minutes so the flavors can meld.

4. Stuff the Peppers:
Spoon the filling into each bell pepper, pressing down lightly to pack them well. Top each with the remaining cheese.

5. Bake:
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
