🍫 What Is a Turtle Cake?
Inspired by the flavors of turtle candies (pecans + caramel + chocolate), Turtle Caramel Cake brings these elements together in a layered or sheet cake form. The result? A rich, gooey dessert that perfectly balances sweetness, crunch, and chocolate decadence.
🥄 Ingredients
For the Cake:
1 box chocolate cake mix (or your favorite homemade recipe)
Ingredients called for on the box (typically eggs, oil, and water)
For the Filling:
1 bag (11 oz) caramels, unwrapped
1/3 cup heavy cream
1 cup chopped pecans
For the Topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream (for ganache)
Extra pecans and caramel drizzle (optional, for decoration)
👨🍳 Instructions
Step 1: Bake the Cake
Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or prepare two 8-inch round cake pans if you want a layer cake.
Mix and bake the chocolate cake according to the package (or your recipe’s) instructions. Let cool completely.
Step 2: Make the Caramel Filling
In a saucepan over low heat, melt the caramels with the heavy cream, stirring until smooth.
Stir in the chopped pecans and remove from heat.
Step 3: Assemble
For a single-layer cake (easiest method):
Once the cake is cooled, spread the caramel-pecan filling evenly over the top.
For a layer cake:
Slice the cake in half horizontally. Spread caramel-pecan filling on the bottom half, then place the top half back on.
Step 4: Make the Ganache
Heat the heavy cream until just simmering (not boiling), then pour over chocolate chips in a bowl.
Let sit 2 minutes, then stir until smooth and glossy.
Pour ganache over the cake, letting it drip slightly down the sides.
Step 5: Garnish & Chill
Top with additional chopped pecans, a caramel drizzle, or even a sprinkle of sea salt. Chill for at least 30 minutes before serving for best slicing.
