Ingredients
For the Garlic Potato Chips:
2 large russet potatoes (or Yukon Gold)
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika (optional for extra flavor)
1 tablespoon grated Parmesan cheese (optional for extra crispiness)
For the Garlic Cheese Sauce:
1 tablespoon butter
2 cloves garlic (minced)
1 cup milk (whole milk recommended)
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional for a spicy kick)
Instructions
Making the Ultra Crispy Garlic Potato Chips:
Preheat & Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
Slice the Potatoes: Using a mandoline slicer or a sharp knife, cut the potatoes into very thin slices (about 1/8 inch thick).
Soak the Slices: Place the potato slices in a bowl of cold water and let them soak for 15-20 minutes. This helps remove excess starch and makes them crispier.
Dry & Season: Drain and pat the slices dry with a kitchen towel. In a large bowl, toss them with olive oil, garlic powder, salt, black pepper, and smoked paprika (if using).
Bake to Perfection: Arrange the slices in a single layer on the baking sheet. Bake for 15-20 minutes, flipping halfway through, until they turn golden brown and crispy.
Cool & Serve: Let the chips cool slightly for maximum crunch. Sprinkle with grated Parmesan cheese for an extra crispy finish.
