Make-Ahead Friendly: Great for prepping ahead for dinner parties or family meals.

Ingredients
For the Vanilla Pudding:
2 cups whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

2 egg yolks

2 tablespoons unsalted butter

1 tablespoon pure vanilla extract

For the Cracker Crumble:
1 cup buttery crackers (like Ritz or Club), crushed

2 tablespoons melted butter

1 tablespoon brown sugar

Optional: pinch of cinnamon or sea salt

Instructions
Make the Pudding:
In a saucepan, whisk together sugar, cornstarch, and salt. Slowly whisk in the milk and cream until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (about 8–10 minutes).

In a small bowl, whisk egg yolks. Slowly add a ladle of the hot pudding mixture to temper, then whisk the egg mixture back into the saucepan.

Cook for 1–2 more minutes, stirring constantly.

Remove from heat and stir in butter and vanilla extract.

Pour into serving cups or ramekins. Cover with plastic wrap (press directly onto surface to prevent skin) and chill for at least 2 hours.
