Ingredients
For the Albondigas (Meatballs):
1 lb ground beef or turkey
1/3 cup cooked white rice
1 egg
1/4 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon chopped cilantro
1/2 teaspoon cumin
Salt and pepper to taste
For the Tikka Masala Sauce:
2 tablespoons oil or ghee
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon garam masala
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1 can (15 oz) tomato sauce or crushed tomatoes
1/2 cup heavy cream or coconut milk
Salt to taste
Optional: chili flakes for heat
Instructions
1. Make the Albondigas
In a large bowl, mix ground meat, rice, egg, onion, garlic, cilantro, cumin, salt, and pepper. Roll into small meatballs (about 1 to 1.5 inches in diameter).
Sear the meatballs in a skillet over medium heat until browned on all sides. They don’t need to be fully cooked—they’ll finish in the sauce. Remove and set aside.
2. Make the Tikka Masala Sauce
In the same skillet, heat oil or ghee. Add onions and sauté until soft and golden. Stir in garlic, ginger, and spices. Cook until fragrant—about 1 minute.
Add tomato sauce, stir well, and let simmer for 10 minutes. Stir in cream or coconut milk and season to taste.
