Chicago-Style Bakery Apple Slices

Chicago-Style Bakery Apple Slices: A Sweet Slice of Midwest Nostalgia 🍎🥧
If you grew up near a Chicago bakery, there’s a good chance you’ve bitten into one of the most iconic—and underrated—Midwestern desserts: the Chicago-Style Bakery Apple Slice. Somewhere between a slab pie and a pastry bar, this treat is packed with cinnamon-spiced apples between layers of tender, flaky crust, then finished with a simple, sweet glaze.

Unlike traditional apple pie, these slices are baked in a sheet pan and cut into bars, making them perfect for feeding a crowd. Whether you’re baking for a holiday, potluck, or just a cozy afternoon snack, these apple slices deliver warm, homemade comfort with every bite.

📝 Ingredients
For the crust:

3 cups all-purpose flour

1 cup cold butter (cut into cubes)

1 tablespoon sugar

1 teaspoon salt

1 egg yolk

1/2 cup cold water (more as needed)

For the filling:

6–7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled and thinly sliced

1/2 cup sugar

1/4 cup brown sugar

1 1/2 teaspoons cinnamon

1 tablespoon lemon juice

2 tablespoons all-purpose flour (to thicken the filling)

Optional: pinch of nutmeg for added warmth

For the glaze:

1 cup powdered sugar

2–3 tablespoons milk or cream

1/2 teaspoon vanilla extract

👩‍🍳 Instructions
1. Prepare the Crust
In a large bowl, whisk together flour, sugar, and salt. Cut in butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.

In a small bowl, whisk the egg yolk with the cold water. Add to the flour mixture and stir until a dough forms. Divide the dough in half, shape into disks, and chill for at least 30 minutes.

2. Make the Apple Filling
In a large bowl, combine the sliced apples, sugars, cinnamon, lemon juice, flour, and nutmeg (if using). Toss until evenly coated and set aside.

3. Assemble the Apple Slices
Preheat your oven to 375°F (190°C). Roll out one dough disk and press it into a greased 9×13-inch baking pan. Add the apple filling in an even layer.

Roll out the second dough disk and place it over the apples. Pinch edges or tuck them in neatly. Cut a few slits in the top to allow steam to escape.

4. Bake
Bake for 45–50 minutes, or until the top is golden brown and the apples are bubbling.

5. Add the Glaze
While the apple slices cool slightly, whisk together the glaze ingredients. Drizzle over the warm bars and let it set.

6. Slice & Serve
Cut into rectangles or squares once fully cooled. Serve as-is, or warm with a scoop of vanilla ice cream for a true bakery-style experience.
