2 salmon fillets (about 6 oz each)

Salt and pepper, to taste

3 tablespoons butter, divided

4 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini work well)

4 cups fresh spinach

1 tablespoon lemon juice

Optional garnish: fresh parsley or lemon wedges

Season the salmon:
Pat salmon fillets dry and season both sides with salt and pepper.

Sear the salmon:
In a large skillet, melt 1 tablespoon of butter over medium heat. Add salmon skin-side down (if it has skin) and cook for about 4-5 minutes until the skin is crisp and the fish is mostly cooked through. Flip and cook another 2-3 minutes until salmon is cooked to your liking. Remove salmon from the pan and set aside.

Sauté the mushrooms:
In the same skillet, add 1 tablespoon of butter and the sliced mushrooms. Cook for 4-5 minutes until browned and tender.

Add garlic and spinach:
Add the remaining butter and minced garlic to the mushrooms, cooking for 1 minute until fragrant. Toss in the spinach and cook until just wilted, about 2 minutes.

Finish with lemon:
Stir in lemon juice, then return the salmon to the pan to warm through briefly.

Serve:
Plate the salmon with the garlic butter spinach and mushrooms. Garnish with fresh parsley or lemon wedges if desired.
