2 tbsp olive oil

1 onion, diced

2 cloves garlic, minced

2 carrots, sliced

2 celery stalks, chopped

1 zucchini, chopped

1 bell pepper, chopped

1 cup broccoli florets

1 (14.5 oz) can diced tomatoes, drained

1 cup cooked rice, quinoa, or pasta (your choice)

1 tsp Italian seasoning

Salt & pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/4 cup grated Parmesan (optional)

Fresh parsley or basil, for garnish

Instructions
Preheat Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Sauté the Veggies
In a large skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Cook for 5 minutes until softened. Stir in zucchini, bell pepper, and broccoli. Cook for another 5–7 minutes until just tender.

Combine with Base
