2 lbs potatoes (Yukon gold or russet), peeled and cubed

4 tbsp butter

½–¾ cup milk or cream

Salt and pepper, to taste

Instructions
1. Cook the Beef
Season beef with salt and pepper. In a large skillet or Dutch oven, heat oil over medium-high heat. Brown the beef in batches until well-seared. Remove and set aside.

2. Build the Gravy
In the same pan, reduce heat to medium. Sauté diced onions until soft (about 5 minutes). Add garlic and cook for 30 seconds.
