For the Crust:
2 cups Golden Oreos or vanilla sandwich cookies, crushed
½ cup freeze-dried strawberries, crushed
6 tbsp unsalted butter, melted
For the Cheesecake Layer:
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
2½ cups whipped topping (like Cool Whip), thawed
For the Strawberry Layer:
1 (3 oz) package strawberry gelatin (Jell-O)
1 cup boiling water
1 cup cold water
2 cups fresh strawberries, diced
For the Crunch Topping:
1 cup crushed Golden Oreos or shortbread cookies
½ cup freeze-dried strawberries, crushed
2 tbsp melted butter

1. Make the Crust
In a medium bowl, combine crushed Golden Oreos, freeze-dried strawberries, and melted butter. Press the mixture firmly into the bottom of a 9×13-inch dish. Place in the fridge to set while you make the filling.
