They’re So Good I Make Them Twice a Week! The Simplest Recipe with Zucchini

If you’re anything like me, you’re always looking for delicious, healthy recipes that don’t take hours in the kitchen. That’s why I have to share my go-to zucchini recipe — it’s so simple and tasty that I honestly make it twice a week. Whether you’re trying to eat more vegetables, need a quick side dish, or want something light and satisfying, this zucchini dish checks every box.

Why Zucchini?
Zucchini is one of those underrated vegetables that can be transformed into just about anything — noodles, fritters, even desserts. It’s low in calories, high in fiber, and packed with vitamins like C and A. Plus, it cooks quickly and absorbs flavors beautifully.

The Simplest Zucchini Recipe You’ll Ever Try
This recipe uses just a handful of ingredients, most of which you probably already have at home. No fancy equipment, no complicated steps — just fresh, wholesome flavor.

Ingredients:
2 medium zucchinis, grated or thinly sliced

1 egg

2–3 tablespoons all-purpose flour (or almond flour for gluten-free)

1 garlic clove, minced

Salt and pepper to taste

Olive oil for frying

Optional Add-ins:
Grated Parmesan or feta cheese

Chopped herbs (parsley, dill, basil)

A pinch of chili flakes for heat

Instructions:
Prep the zucchini: If you’re grating the zucchini, place it in a clean kitchen towel and squeeze out as much moisture as possible. This is the secret to crispy results!

Mix: In a bowl, combine zucchini, egg, flour, garlic, salt, and pepper. Add any optional extras you like.

Fry: Heat a bit of olive oil in a skillet over medium heat. Spoon the mixture into the pan and flatten slightly to form small fritters or patties.
